Blackbird Italian Seitan Crumbles Pasta with Spinach & Cherry Tomatoes

Serves 3

INGREDIENTS

  • 1 pack 8oz Blackbird Italian Sausage Crumbles

  • 8oz fusilli pasta

  • 1 cup cherry tomatoes, halved

  • 2 cups fresh spinach

  • 1 1/2 cups tomato sauce

  • 1/2 cup vegan cheese (mozzarella or parmesan)

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • Salt & pepper to taste

  • Optional: fresh basil for garnish

METHOD

  1. Boil pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

  2. Heat olive oil in a large skillet over medium heat. Add Blackbird Italian Sausage Crumbles and cook until slightly browned, 3–4 minutes.

  3. In the skillet with sausage, add minced garlic and sauté for 30 seconds. Stir in cherry tomatoes and cook until they start to soften, about 2–3 minutes.

  4. Pour in tomato sauce and bring to a simmer. Mix in spinach and cook until wilted, 1–2 minutes. If the sauce is too thick, add a splash of reserved pasta water.

  5. Toss cooked pasta into the skillet, coating it evenly with sauce and sausage. Season with salt and pepper.

  6. Divide into 3 bowls, sprinkle with cheese, and garnish with fresh basil if desired.
