Seitan is a high-protein wheat protein, used as a meat alternative in East Asia since the 6th century. We started by making it for local restaurants. As more people asked to cook with it at home, we opened our own dedicated facility in NYC to make the best seitan in the western world. Hand-tossed, hand-battered, small-batch. Because good food is worth the effort.
