Vegan BBQ Seitan Tacos

Makes 9-10 Tacos

INGREDIENTS:

METHOD:

  1. Make Coleslaw in bowl and set aside.

  2. Heat skillet on low/medium with a light oil. Shred any large pieces of Texas BBQ Seitan and add everything to skillet. Pan fry about 5-10 minutes until each side has a little bit of crispiness.

  3. Reduce heat to low and pour BBQ sauce into skillet. Stir until seitan is evenly covered with the sauce. Remove skillet from heat.

  4. Heat Refried Beans in small saucepan on stovetop. Thinly slice Avocado.

ASSEMBLY:

  1. Lay out Flour Tortillas. On each tortilla, spread a spoonful of Refried Beans, 2 tablespoons of Coleslaw, Scoop of BBQ Seitan (about 3 medium/large pieces), 1 heaping tablespoon of Vegan Mozzarella Cheese, 2 slices of Avocado.

  2. Serve and Enjoy!

NOTES:

  • An optional step is to heat tortillas before assembly.

  • Coleslaw can be made a day ahead of time and kept in the fridge.
